I truly love breakfast, but I have very little patience for it.  I’m not a morning person, I love sleep, and usually what gets me out of bed is the prospect of some yummy food. But I want it immediately, and I don’t want it to require thinking. So I often end up with bran flakes and almond milk. Not the worst thing in the world, but I’ve been trying to make my meals more actively nutritious, and veer away from gluten.

I read food blogs and cookbooks like it’s my job, and I see a lot of incredible looking breakfast ideas. Which all just seem too much for my sleep-addled sense of motivation. So here it is, the easiest, most nutritious, yummy breakfast out there (and if you’re like me, it required zero extra grocery shopping!)

Thanks to My Petite Kitchen Cookbook

65 g (1 C) shredded coconut

75 g (1/2 C) dried cranberries (or other dried fruit)

40 g (1/4 C) pepitas (pumpkin seeds

2 Tbs chia seeds

65 g (1/2 C) sliced almonds

40 g (1/4 C) sunflower seeds

Mix all ingredients and store in an airtight glass jar.

I served mine with goat’s milk yogurt, 1/2 a banana, sliced, and a drizzle of honey. A sprinkle of cinnamon and some nut butter would be great too.
